


Blue Wensleydale
This blue-veined version of Wensleydale is rarely seen today, having had its origins in northern England in the twelfth century. It has a slightly open and crumbly texture to promote mould growth.
Each wheel weighs approximately 2kg.
This cheese honours the original recipe handed down to the English by the Cistercian Monks of northern France, sometime in the twelfth century – unlike our Brexit Box, a harbinger of pan-European cooperation… The slightly lactic and salty undertones of typical Wensleydale are completely transformed by the activity of the blue mould.
This is a truly small-batch cheese. We only make a handful of wheels each year, most of which are reserved for private sale.

Unless you have qualified for free shipping, we charge a flat delivery fee of $20 per order shipped by Australia Post Express Delivery.
Cheeses are shipped with gel ice packs and Australia Post has authority to leave packages at your property, even if unattended. Products typically do not spoil if delivered above refrigeration temperature of 4deg C. (Most of our products are matured over many months or years at 10 - 15deg C.) However, please ensure cheeses are refrigerated as soon as possible.
Parcels are dispatched from Gippsland twice a week and delivery takes between 1 to 3 days from dispatch. We are not responsible for the service, delays, or delivery by Australia Post. Our shipping costs are non-refundable and we do not accept PO Box addresses for orders.
For large orders (over 5kg) we may need to use more than one shipping box, in which case there may be additional shipping charges. We will contact you before dispatch if this is the case.
