Cloth-Ashed Red Leicester
Made by hand in small batches to a traditional recipe, Red Leicester has a slightly lower fat content than Cheddar and, if aged well, maintains a more open and crumbly texture.
Use the whole wheel to transform a cheeseboard, or portion it to share with friends and family.
Each wheel weighs approximately 2kg.
At the peak of Spring, when clover production is high and the milk contains more fat, our Red Leicester exhibits beautiful earthy flavours.
It takes its colour from a natural dye (beta carotene) found in the seeds of the South American Achiote tree. The red colour was
traditionally used to signify milk quality. It looks stunning on a cheeseboard and is perfectly accompanied by celery, fig jam or white wine.
NO ARTIFICIAL PRESERVATIVES, COLOURING OR FLAVOURING
Cow’s milk, salt, non-animal rennet, starter cultures (milk), natural colour (annatto berry)
