Maffra Cheddar is recognised both nationally and internationally as one of the world's best cheeses. We still mill, cheddar and salt by hand (yes, cheddar is a verb as well as a noun). We use a semi-permeable cloth and a natural vegetable ash to not only lock-in moisture, but to regulate the rate of ripening.
Unlike the English cheddar-making tradition, we focus on a different maturation pathway to break down fats, proteins and cultures (and their derivatives), a process known as catabolism. This process is based on a uniquely Australian cheddar-making tradition, one which has been mostly lost in this era of mass automation, and one which we want to preserve.
Each unit is 150g, and you can only purchase it alongside 4 other 150g units.
Club cheeses are a mix of different cheeses blended to produce a smooth, buttery texture, often with other ingredients. In addition to being excellent table cheeses, they pair well with beer and wine. test
Use them during summer to create a beautiful cheeseboard for your BBQ, or in winter they can sliced and grilled in toasties, or grated over steaming pasta.
Vintage Club Cheddar:
Cow’s milk, salt, non-animal rennet, starter cultures (milk)
Pickled Onion and Chilli Club Cheddar:
Cow’s milk, salt, non-animal rennet, starter cultures (milk), pickled onion (18%, onion, vinegar, sugar, salt), crushed chili (1%)
Peppercorn and Garlic Club Cheddar:
Cow’s milk, salt, non-animal rennet, starter cultures (milk), crushed garlic (1%), peppercorn (1%)
Wensleydale with Cranberries:
Cow’s milk, salt, non-animal rennet, starter cultures (milk), dried cranberries (15%, sugar, sunflower oil)
Garlic Cheddar:
Cow’s milk, salt, non-animal rennet, starter cultures (milk), crushed garlic (1%)

Unless you qualify for free shipping, we charge a flat delivery fee of $20 per order shipped by Australia Post Express Delivery. Australia Post has authority to leave packages at your property.
Orders are shipped with gel ice packs. However, please ensure someone is available at the delivery address to collect and refrigerate the cheese on arrival.
Orders are dispatched from Gippsland twice a week and delivery takes between 1 to 3 days. We are not responsible for the service, delays or delivery by Australia Post. Our shipping costs are non-refundable and we do not accept PO Box addresses for orders.
